Garden Eggs Stew

Garden egg stew is a popular Ghanaian stew made with garden eggs. It is a delicious stew that is easy to prepare and can be eaten with rice, yam, plantain, potatoes, and more.

Instructions
  1. Rinse garden eggs and place them in a large pot. Add water to cover, cover pot with lid, and boil over medium-high heat until garden eggs are tender, about 30 to 45 minutes.
  2. Once garden eggs are tender, remove from heat and set aside to cool. Once cool, cut into bite-size pieces and set aside.
  3. In a large pot, heat coconut oil over medium heat. Add onions and sauté until onions are soft and translucent.
  4. Add habanero pepper and spice blend. Sauté for 1 minute.
  5. Add tomato sauce and garden egg stock. Stir to combine.
  6. Add garden eggs and stir to combine. Cover the pot with a lid and simmer over medium-low heat for 10 minutes.
  7. Taste and adjust for seasoning with salt and seasoning if needed.
  8. Add extra vegetables if using. Stir to combine and remove from heat.
  9. Serve with rice, yam, plantain, potatoes, and more.

  • 1-2tbsp Spice Blend or To Taste
  • Salt - tt
  • 1tsp - Chili Powder or tt
  • Water
  • 1 - Medium Onion
  • 1 - Habanero Pepper
  • 1tsp - Spice Blend
  • 2cups - Tomato Sauce
  • Garden Egg Stock
  • Salt & Seasoning To Taste If Needed
  • Coconut Oil
  • Extra Vegetables (Optional)
  • Carrots
  • Red Onion
  • Green Bell Pepper
